Bacon Green Bean Casserole

1 lb fresh green beans, trimmed

6 slices thick-cut bacon, chopped

1 medium onion, diced

3 cloves garlic, minced

½ cup sour cream

1 cup cream of mushroom soup (homemade or store-bought)

1 cup shredded cheddar cheese

1 cup crispy fried onions (for topping)

1 teaspoon Dijon mustard

Salt and pepper to taste

Fresh thyme or parsley, for garnish (optional)

Instructions
 

Preheat the oven to 350°F (175°C).

    In a large pot of boiling salted water, blanch the green beans for about 4–5 minutes, until bright green and tender-crisp. Drain and set aside.

      In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and drain on paper towels, leaving the bacon grease in the skillet.

        In the same skillet, sauté the diced onion in the reserved bacon grease until soft and translucent (about 5 minutes). Add the minced garlic and cook for an additional minute until fragrant.

          In a large mixing bowl, combine the cooked green beans, crispy bacon, sautéed onion and garlic, sour cream, cream of mushroom soup, shredded cheddar cheese, Dijon mustard, salt, and pepper. Mix until well combined.

            Transfer the mixture into a greased 9x13-inch baking dish and spread evenly.

              Bake in the preheated oven for 25 minutes. After 25 minutes, remove from the oven and sprinkle the crispy fried onions on top.

                Return to the oven and bake for an additional 10-15 minutes, until the casserole is bubbling and the onions are golden brown.

                  Remove from the oven and let cool for a few minutes. Garnish with fresh thyme or parsley if desired before serving.
