4 slices of thick-cut bacon

1 lb ground beef

Salt and pepper to taste

4 slices of cheddar cheese

4 slices of sourdough bread

2 tablespoons mayonnaise

2 tablespoons ketchup

1 tablespoon yellow mustard

1/4 cup diced pickles

1/2 cup shredded lettuce

1/2 medium red onion, thinly sliced

Butter for grilling

Instructions
 

Cook the Bacon: In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and place them on a paper towel-lined plate to drain excess grease.

    Prepare the Beef: In the same skillet, drain excess bacon grease if necessary, leaving just enough to cook the beef. Form the ground beef into two patties, season with salt and pepper, and cook them over medium heat for about 4-5 minutes per side or to your preferred doneness. Add a slice of cheddar cheese on top of each patty and cover the skillet for about a minute to melt the cheese.

      Build the Sandwich: Butter one side of each slice of sourdough bread. Spread mayonnaise on the unbuttered side of two slices. On the mayo side, layer the cooked beef patties with melted cheese, two slices of bacon, a smear of ketchup, mustard, pickles, shredded lettuce, and red onions. Top each with another slice of sourdough, buttered side out.

        Grill the Sandwich: Clean the skillet and heat it over medium-low heat. Place the sandwiches in the skillet. Grill for about 4-5 minutes on each side, or until the bread is golden brown and crispy and the cheese is gooey.

          Slice and Serve: Once grilled, remove from the skillet. Let them rest for a minute before slicing them in half diagonally for easy eating.
