Ingredients
  

1 cup all-purpose flour

1 cup whole wheat flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup cold unsalted butter, cubed

1 cup shredded sharp cheddar cheese

1/2 cup cooked bacon, chopped

3/4 cup buttermilk

1 tablespoon fresh chives, chopped (optional for garnish)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and black pepper until well combined.

      Add the cubed cold butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

        Stir in the shredded cheddar cheese and chopped bacon, mixing just until combined.

          Pour in the buttermilk and gently stir the mixture until just combined. Be cautious not to overwork the dough; it should be slightly sticky and lumpy.

            Turn the dough out onto a floured surface and gently knead it about 2-3 times until it comes together. Pat the dough into a 1-inch thick rectangle.

              Using a sharp knife or pizza cutter, cut the dough into squares or use a round biscuit cutter to cut out your preferred shapes.

                Place the biscuits on the prepared baking sheet, leaving space between them for spreading.

                  Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown.

                    Remove from the oven and let them cool slightly before serving. If desired, garnish with fresh chives.
