2 pounds Yukon Gold potatoes, thinly sliced

2 cups heavy cream

1 cup whole milk

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 ½ cups sharp cheddar cheese, grated

1 cup Gruyère cheese, grated

Salt and pepper to taste

2 tablespoons unsalted butter

½ cup panko breadcrumbs

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Baking Dish: Grease a 9x13 inch baking dish with 1 tablespoon of butter.

      Mix the Cream Sauce: In a medium saucepan over medium heat, combine heavy cream, milk, minced garlic, thyme, rosemary, salt, and pepper. Stir occasionally until it begins to simmer, then remove from heat.

        Layer the Potatoes: Arrange half of the sliced potatoes in the bottom of the prepared baking dish. Pour half of the cream mixture over the potatoes, followed by half of the cheddar and Gruyère cheeses.

          Repeat the Layers: Add the remaining potato slices in another layer, pour the rest of the cream mixture over them, and finish with the remaining cheeses.

            Add Breadcrumbs: In a small bowl, melt the remaining tablespoon of butter, then mix it with the panko breadcrumbs. Sprinkle the buttery breadcrumbs evenly on top of the cheese layer.

              Bake the Dish: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are fork-tender and the top is golden brown and bubbly.

                Garnish and Serve: Let the dish cool for a few minutes before garnishing with fresh parsley. Serve warm.
