2 cups shelled edamame (fresh or frozen)

1 red bell pepper, diced

1 small cucumber, diced

1/2 cup carrots, grated

4 green onions, sliced

1/4 cup fresh cilantro, chopped

1/4 cup sesame seeds (toasted)

3 tablespoons soy sauce (low sodium)

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon fresh ginger, grated

Salt and pepper to taste

Instructions
 

If using frozen edamame, cook according to the package instructions until tender, then drain and set aside to cool.

    In a large mixing bowl, combine the cooked edamame, diced red bell pepper, cucumber, grated carrots, sliced green onions, and chopped cilantro.

      In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey (or maple syrup), and grated ginger until well combined.

        Drizzle the dressing over the salad mixture and toss gently to coat all the ingredients evenly.

          Sprinkle the toasted sesame seeds onto the salad, and add salt and pepper to taste.

            Let the salad sit for about 10-15 minutes to allow the flavors to meld together.

              Serve chilled or at room temperature.
