Ingredients
  

12 oz fettuccine or your pasta of choice

3 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Asiago cheese

1/2 cup sun-dried tomatoes, chopped

1 cup baby spinach

1 teaspoon crushed red pepper flakes (optional)

Salt and black pepper to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set aside.

    Saute the Garlic: In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes, being careful not to burn it.

      Make the Cream Sauce: Lower the heat to medium-low and pour in the heavy cream, stirring frequently. Allow it to simmer gently for about 2-3 minutes until slightly thickened.

        Add the Cheese & Tomatoes: Gradually stir in the grated Asiago cheese, mixing continuously until melted and smooth. Toss in the chopped sun-dried tomatoes and the baby spinach, letting the spinach wilt.

          Combine with Pasta: Add the cooked pasta to the sauce, tossing to coat well. If the sauce is too thick, gradually add some reserved pasta water to loosen it up.

            Season: Stir in the crushed red pepper flakes, if using, and season the dish with salt and black pepper to taste.

              Serve: Divide the cheesy pasta among serving plates and garnish with fresh basil leaves.
