2 medium-sized apples, peeled and cored

1 cup all-purpose flour

1 tablespoon granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon cinnamon

1 cup buttermilk (or milk with a dash of lemon juice)

1 large egg

2 tablespoons melted butter, plus more for cooking

Maple syrup, for serving

Chopped nuts (optional, for garnish)

Instructions
 

Begin by preparing the apples. Slice them into 1/2-inch thick rings, creating a hole in the center of each slice to resemble a donut. Set aside.

    In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until well combined.

      In a separate bowl, whisk together the buttermilk, egg, and melted butter until smooth.

        Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to over-mix; some small lumps are okay.

          Preheat a non-stick skillet or griddle over medium heat and add a small amount of butter.

            For each pancake, place an apple ring onto the skillet. Pour a ladle of batter into the center of the ring, ensuring it fills in the middle. Cook until bubbles appear on the surface and the edges look set, about 2-3 minutes.

              Carefully flip the pancake and cook for another 2-3 minutes until golden brown and fully cooked through.

                Remove the pancakes and keep warm in a low oven while you repeat with the remaining apple rings and batter.

                  Serve the apple ring pancakes warm, drizzled with maple syrup and topped with chopped nuts if desired.
