2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 cup granulated sugar

1 large egg

3/4 cup milk

2 tablespoons unsalted butter, melted

2 cups peeled and diced apples (Granny Smith or Honeycrisp recommended)

1 teaspoon vanilla extract

Oil for frying (vegetable or canola)

Optional: powdered sugar for dusting

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and granulated sugar until well combined.

    Combine Wet Ingredients: In another bowl, whisk together the egg, milk, melted butter, and vanilla extract until smooth.

      Combine Mixtures: Pour the wet mixture into the dry ingredients. Stir gently until just combined. Do not overmix. Fold in the diced apples gently to avoid breaking them apart.

        Heat Oil: In a large, deep skillet or pot, heat about 2 inches of oil over medium heat. You want it hot enough for frying (around 350°F or 175°C). You can test the oil's readiness by dropping a small amount of batter in; it should sizzle and rise to the surface.

          Fry the Bites: Using a small cookie scoop or teaspoon, carefully drop tablespoon-sized portions of the batter into the hot oil, ensuring not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until golden brown.
