Ingredients

2 medium-sized apples (Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup milk

1 large egg

1/2 teaspoon vanilla extract

1/4 cup apple cider or juice

Oil for frying

1 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

1/2 teaspoon ground cinnamon (for glaze)

Instructions

Prepare the Apples: Start by peeling and dicing the apples into small chunks. You can toss them with a little lemon juice to prevent browning.

Create the Batter: In a mixing bowl, whisk together the flour, granulated sugar, baking powder, ground cinnamon, and salt until well combined.

Mix Wet Ingredients: In another bowl, combine the milk, egg, vanilla extract, and apple cider. Whisk until smooth.

Combine: Pour the wet ingredients into the dry mixture. Stir gently until just combined, then fold in the diced apples. The batter will be thick and chunky.

Heat the Oil: In a deep skillet or pot, heat about 2 inches of oil to 350°F (175°C). You can check the temperature with a kitchen thermometer or by dropping a small amount of batter into the oil—if it sizzles and rises to the top, it’s ready.

Fry the Bites: Using a tablespoon or a small ice cream scoop, carefully drop spoonfuls of the batter into the hot oil. Fry in batches to avoid overcrowding, cooking for about 2-3 minutes per side, or until golden brown. Remove them with a slotted spoon and let them drain on paper towels.

Make the Glaze: In a small bowl, mix the powdered sugar, milk, and ground cinnamon until smooth. Adjust the consistency by adding more milk if it's too thick or more powdered sugar if too thin.

Glaze the Bites: Once the fritter bites have cooled slightly, drizzle or dip each one in the glaze until fully coated.

Serve: Enjoy your Apple Fritter Bites warm for the freshest taste!
