Ingredients
  

2 medium apples, peeled, cored, and diced

1 cup all-purpose flour

1/4 cup granulated sugar

1/2 tsp baking powder

1/4 tsp baking soda

1/2 tsp cinnamon

1/4 tsp salt

1 large egg

1/2 cup milk

1 tsp vanilla extract

Oil for frying

Powdered sugar for dusting

Instructions
 

In a large bowl, combine the diced apples with 1 tablespoon of granulated sugar and set aside to let the juices soak in for about 10 minutes.

    In another bowl, whisk together the flour, remaining sugar, baking powder, baking soda, cinnamon, and salt.

      In a separate bowl, mix the egg, milk, and vanilla extract until well combined.

        Pour the wet ingredients into the dry ingredients and stir until just combined; a few lumps are fine. Gently fold in the prepared apples.

          Heat about 2 inches of oil in a deep pan or fryer to 350°F (175°C).

            Using a small scoop or spoon, drop tablespoonfuls of the batter into the hot oil, being careful not to overcrowd the pan. Fry until golden brown, about 2-3 minutes on each side.

              Remove the fritter bites from the oil with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

                While still warm, dust the bites with powdered sugar. Serve immediately for the best taste!
