2 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg (optional)

1/2 cup whole milk

1 large egg

1 teaspoon vanilla extract

Oil, for frying (vegetable or canola)

1/2 cup powdered sugar (for dusting)

1 teaspoon cinnamon (for dusting)

Prepare the Apples: In a medium bowl, combine the diced apples with 1 tablespoon of the granulated sugar and 1/2 teaspoon of cinnamon. Set aside to let them macerate.

    Make the Batter: In a large bowl, whisk together the flour, remaining sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. In another bowl, mix the milk, egg, and vanilla extract until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

      Fold in Apples: Gently fold the macerated apples into the batter until evenly distributed.

        Heat the Oil: In a deep skillet or fryer, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C). You can test it by dropping a small spoonful of batter into the oil; it should sizzle and rise to the surface.

          Fry the Bites: Using a small cookie scoop or tablespoon, carefully drop spoonfuls of batter into the hot oil. Fry in batches, making sure not to overcrowd the pan. Cook for about 2-3 minutes on each side until they are golden brown.

            Drain: Once golden, use a slotted spoon to remove the fritter bites and transfer them to a plate lined with paper towels to drain excess oil.

              Dust and Serve: In a small bowl, mix the powdered sugar with the additional cinnamon. While the fritter bites are still warm, dust them generously with the cinnamon sugar mixture. Serve warm or at room temperature.
