3 medium-sized apples, peeled, cored, and diced

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/2 cup brown sugar, packed

1 cup rolled oats

1/2 cup all-purpose flour

1/4 cup unsalted butter, melted

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans)

1 teaspoon vanilla extract

1/4 cup granulated sugar (optional, for sprinkling)

1 pound of puff pastry (2 sheets)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Apples: In a mixing bowl, combine the diced apples with lemon juice, ground cinnamon, and 1/4 cup of brown sugar. Stir well to coat the apples evenly and set aside.

      Make the Crisp Mixture: In another bowl, mix together rolled oats, remaining brown sugar, flour, melted butter, salt, chopped nuts, and vanilla extract. Stir until the mixture is crumbly and combined.

        Prepare Puff Pastry: Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into squares (around 3 inches by 3 inches).
