1 cup egg whites (about 8 large eggs)

1 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon cream of tartar

1 cup all-purpose flour

½ teaspoon salt

Vegetable oil for frying

½ cup unsalted butter (melted)

1 cup cinnamon sugar (1 cup sugar mixed with 2 tablespoons ground cinnamon)

Instructions
 

Preheat your oven to 350°F (175°C) and position a rack in the lower third. Prepare an ungreased angel food cake pan.

    Whip the egg whites: In a large mixing bowl, using a stand mixer or hand mixer, beat the egg whites with cream of tartar on medium speed until soft peaks form. Gradually add sugar while continuing to beat until firm peaks form and the mixture is glossy.

      Incorporate flavors: Gently fold in vanilla extract.

        Sift dry ingredients: In another bowl, sift together the flour and salt to remove any lumps. Gradually fold the flour mixture into the whipped egg whites just until combined, being careful not to deflate the mixture.

          Transfer to pan: Pour the batter into the prepared angel food cake pan, smoothing the top with a spatula.

            Bake the cake: Bake for about 30-35 minutes, or until the cake is golden brown and springs back when lightly touched.
