8 oz fettuccine or pasta of choice

1 tablespoon olive oil

1 onion, sliced

1 bell pepper (any color), sliced

1 red chili pepper, sliced (optional for extra heat)

12 oz andouille sausage, sliced

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper, to taste

1 cup heavy cream

½ cup chicken broth

½ cup grated Parmesan cheese

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced onion, bell pepper, and chili pepper (if using). Sauté for about 5-7 minutes, until the vegetables are softened and slightly caramelized.

      Brown the Sausage: Add the sliced andouille sausage to the skillet. Cook for another 5-6 minutes, stirring occasionally, until the sausage is browned and heated through.

        Aromatics: Stir in the minced garlic, smoked paprika, cumin, and chili powder. Cook for 1-2 minutes until fragrant.

          Create the Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer, allowing it to thicken slightly for about 3-4 minutes.

            Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing everything together until the pasta is well-coated with the sauce. If it seems too thick, you can add a splash more chicken broth to loosen it.

              Cheese it Up: Sprinkle the grated Parmesan cheese over the pasta and stir again until melted and all ingredients are well combined. Season with salt and pepper to taste.

                Serve: Remove from heat and transfer the fajita pasta to serving plates. Garnish with freshly chopped cilantro and serve with lime wedges on the side for a burst of freshness.
