1 cup unsalted butter, softened

1 cup granulated sugar

1 cup packed brown sugar

2 large eggs

2 teaspoons vanilla extract

2 ½ cups all-purpose flour

¾ cup unsweetened cocoa powder

1 teaspoon baking soda

½ teaspoon salt

1 cup Andes mint baking chips

½ cup semi-sweet chocolate chips

Optional: Additional Andes mints for topping

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Cream the Butter and Sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy and smooth.

      Add Eggs and Vanilla: Mix in the eggs, one at a time, followed by the vanilla extract, ensuring everything is well incorporated.

        Combine Dry Ingredients: In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.

          Mix Dry and Wet Ingredients: Gradually add the dry mixture to the wet mixture, mixing just until combined. Do not overmix.

              Scoop the Dough: Using a cookie scoop or tablespoon, drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.

                  Cool Down: Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
