Ingredients

1 lb elbow macaroni

1 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon Dijon mustard

1 cup celery, finely chopped

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup sweet pickle relish

1/4 cup red onion, finely chopped

3 hard-boiled eggs, chopped

Salt and black pepper to taste

Fresh parsley, for garnish

Instructions

Begin by cooking the elbow macaroni according to package instructions until al dente. Once cooked, drain and rinse under cold water to cool it down. Set aside.

In a large mixing bowl, combine the mayonnaise, apple cider vinegar, and Dijon mustard. Stir until the dressing is smooth and well blended.

Add the finely chopped celery, diced cucumber, diced red bell pepper, sweet pickle relish, and chopped red onion to the dressing mixture.

Incorporate the cooled macaroni into the mixing bowl and gently stir until the pasta is well coated with the dressing and combined with the vegetables.

Fold in the chopped hard-boiled eggs, ensuring they remain chunky for texture.

Season the salad with salt and black pepper to taste. Adjust the flavor if needed, adding more relish or mustard for a tangier kick.

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
