2 cups cooked pulled pork

1 cup coleslaw mix (cabbage and carrots)

1/2 cup green onions, sliced

1 cup shredded cheese (cheddar or mozzarella)

12 egg roll wrappers

1 tablespoon soy sauce

1 tablespoon barbecue sauce

1 teaspoon garlic powder

1/2 teaspoon black pepper

1 egg, beaten (for sealing)

Instructions
 

In a mixing bowl, combine the pulled pork, coleslaw mix, sliced green onions, shredded cheese, soy sauce, barbecue sauce, garlic powder, and black pepper. Blend the mixture until well combined.

    Take an egg roll wrapper and lay it on a clean surface with one corner facing you, forming a diamond shape.

      Place about 2 to 3 tablespoons of the pulled pork mixture in the center of the wrapper.

        Fold the bottom corner over the filling, then fold in the sides, and roll it away from you to form a tight cylinder. Use a little beaten egg on the top corner to seal the egg roll closed.

          Repeat the process with the remaining wrappers and filling.

            Preheat the air fryer to 375°F (190°C). Lightly spray the egg rolls with cooking spray to help them crisp up while cooking.

              Place the egg rolls in the air fryer basket in a single layer without overlapping.

                Cook the egg rolls for 10-12 minutes or until they are golden brown and crispy, flipping them halfway through for even cooking.

                  Once cooked, remove from the air fryer and let them cool slightly before serving.
