2 cups cooked and cooled jasmine rice

1 cup mixed vegetables (peas, carrots, corn)

2 eggs, beaten

3 green onions, sliced

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the air fryer to 370°F (190°C) for about 5 minutes.

    In a large bowl, combine the cooked rice, mixed vegetables, and green onions.

      In a separate bowl, whisk the beaten eggs with soy sauce, sesame oil, garlic powder, ginger powder, salt, and pepper.

        Pour the egg mixture over the rice and vegetables. Mix well until everything is evenly coated.

          Spray the air fryer basket with a light coat of cooking spray to prevent sticking.

            Transfer the rice mixture to the air fryer basket, spreading it out evenly.

              Cook at 370°F (190°C) for 12-15 minutes, shaking the basket halfway through to ensure even cooking.

                Once cooked, check to see if the rice is crispy and lightly browned; if not, you can air fry for an additional 2-3 minutes.

                  Remove from the air fryer, garnish with fresh cilantro if desired, and serve hot.
