Chicken Souvlaki is a beloved dish that captures the essence of Mediterranean cuisine. Originating from Greece, souvlaki consists of skewered and grilled meat, often served with pita bread, fresh vegetables, and sauces like tzatziki. This dish is not just a staple in Greek households; it has transcended borders, becoming a popular choice in many international menus. The word "souvlaki" itself means "skewered meat," and its simplicity belies the complex flavors that come from marinating and grilling the chicken to perfection.

Ingredients

1 lb boneless, skinless chicken thighs, cut into 1-inch cubes

3 tablespoons olive oil

2 tablespoons fresh lemon juice

4 garlic cloves, minced

1 tablespoon dried oregano

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions

Marinate the Chicken: In a large mixing bowl, combine the olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper. Whisk until thoroughly mixed. Add the chicken cubes to the marinade, making sure they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Prepare the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes. If your air fryer doesn’t require preheating, you can skip this step.

Assemble Skewers: Thread the marinated chicken pieces onto the skewers, leaving a bit of space between each piece for even cooking.

Air Fry the Chicken: Place the chicken skewers in the basket of the air fryer in a single layer (you may need to do this in batches). Air fry at 400°F (200°C) for 10-12 minutes, turning halfway through, until the chicken is cooked through and has a nice golden-brown color.

Serve: Remove skewers from the air fryer and let them rest for a couple of minutes. Serve hot with pita bread, tzatziki sauce, and a side salad or grilled vegetables.
