For the Bang Bang Shrimp:

1 lb large shrimp, peeled and deveined

1 cup panko breadcrumbs

1/2 cup all-purpose flour

1/2 tsp garlic powder

1/2 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

2 large eggs, beaten

1/4 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust to taste)

Juice of 1 lime

For the Tacos:

8 small corn tortillas

1 cup shredded cabbage (green or purple)

1 ripe avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Shrimp: In a bowl, combine panko breadcrumbs, flour, garlic powder, smoked paprika, salt, and black pepper. In another bowl, beat the eggs. Dip each shrimp first in the egg, then dredge them in the breadcrumb mixture, ensuring they are fully coated. Place the breaded shrimp on a plate.

    Air Fry the Shrimp: Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray. Arrange the breaded shrimp in the basket in a single layer, making sure they don’t overlap. Cook for 8-10 minutes, shaking the basket halfway through, until golden brown and crispy.

      Make the Bang Bang Sauce: In a mixing bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until well combined. Taste and adjust the spiciness according to your preference.

        Warm the Tortillas: While the shrimp is cooking, warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side, or until pliable.

          Assemble the Tacos: Place a handful of shredded cabbage in each tortilla. Top with 3-4 crispy Bang Bang shrimp. Drizzle with the Bang Bang sauce and add slices of avocado.
