30 MINUTE THAI CHICKEN NOODLE SOUP

Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, diced

4 cups chicken broth

2 cups coconut milk

2 tablespoons green curry paste

200g rice noodles

1 bell pepper (red or yellow), thinly sliced

1 cup snap peas, trimmed

2 cloves garlic, minced

1 inch ginger, grated

1 tablespoon fish sauce

1 tablespoon lime juice

Fresh cilantro, for garnish

Sliced green onions, for garnish

Lime wedges, for serving

2 tablespoons vegetable oil

Instructions
 

In a large pot, heat the vegetable oil over medium heat. Add the diced chicken and cook for about 5-6 minutes until golden brown and cooked through. Remove the chicken and set aside.

    In the same pot, add the minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.

      Stir in the green curry paste and cook for another minute. This allows the flavors to develop.

        Pour in the chicken broth and coconut milk, stirring well to combine. Bring the mixture to a gentle simmer.

          Add the sliced bell pepper, snap peas, and cooked chicken back into the pot. Season with fish sauce and lime juice. Let it simmer for about 5 minutes until the vegetables are tender-crisp.

            Meanwhile, prepare the rice noodles according to package instructions. Drain and add them to the soup.

              Taste and adjust seasoning if necessary. You can add more lime juice or fish sauce based on your preference.

                Serve the soup hot, garnished with fresh cilantro and sliced green onions. Offer lime wedges on the side for an extra burst of flavor.
