1 lb ground beef

6 slices beef bacon

1 medium onion, diced

1 bell pepper, diced (any color)

4 slices provolone cheese

2 teaspoons garlic powder

2 teaspoons smoked paprika

Salt and pepper to taste

4 hero or hoagie rolls

1 tablespoon olive oil

Lettuce and tomato slices (for garnish)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the sliced beef bacon and cook until crispy. Remove from the skillet and drain on paper towels.

    In the same skillet, add the diced onions and bell peppers. Sauté until the vegetables are soft and slightly caramelized, about 5-7 minutes.

      Push the vegetables to one side of the skillet and add the ground beef to the other side. Season with garlic powder, smoked paprika, salt, and pepper. Cook the beef, breaking it apart with a spatula, until browned and fully cooked, about 8-10 minutes.

        Combine the sautéed vegetables with the ground beef in the skillet, mixing them together evenly.

          Lay the slices of provolone cheese on top of the beef mixture, allowing them to melt slightly from the residual heat.

            While the cheese melts, slice the hero rolls lengthwise without cutting all the way through.

              Once the cheese has melted, use a spatula to scoop a generous portion of the chopped beef and vegetable mixture into each roll.

                Top the sandwich with crispy beef bacon, along with fresh lettuce and tomato slices if desired. Serve immediately.
