Ingredients

  • 2 pieces ripe mangoes, peeled and diced
  • 1 cup heavy whipping cream
  • 1 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 200 g graham crackers
  • 1 cup shredded coconut, toasted
  • 0.5 cup chopped macadamia nuts (optional)
  • 1 Prise fresh mint leaves for garnish

Instructions

  1. In a large mixing bowl, combine the whipping cream, sweetened condensed milk, and vanilla extract. Whip until thickened and smooth.
  2. In a 9x13 inch baking dish, create a base layer with a single layer of graham crackers, breaking them to fit if necessary.
  3. Spread half of the whipped cream mixture over the graham crackers, smoothing it out with a spatula.
  4. Evenly distribute half of the diced mangoes on top of the cream layer.
  5. Sprinkle half of the toasted coconut and macadamia nuts (if using) over the mango layer.
  6. Repeat layers with another layer of graham crackers, the remaining cream mixture, diced mangoes, toasted coconut, and macadamia nuts.
  7. Cover the dessert and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the graham crackers to soften.
  8. Before serving, garnish with fresh mint leaves for a pop of color and added freshness. Slice into squares and enjoy!
