Ingredients

  • 2 oz tuna steaks
  • 2 tablespoons Thai chili paste
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 200 g rice noodles
  • 1 piece bell pepper, thinly sliced
  • 1 piece carrot, julienned
  • 3 pieces green onions, chopped
  • 1 tablespoon sesame oil
  • 1 tablespoon peanut butter
  • 1 Prise salt (to taste)
  • 1 Prise pepper (to taste)
  • 1 bunch fresh cilantro for garnish
  • 1 piece lime wedges for serving

Instructions

  1. In a small bowl, whisk together the Thai chili paste, soy sauce, lime juice, and honey. This will be your marinade for the tuna steaks.
  2. Place the tuna steaks in a shallow dish and pour the marinade over them, ensuring they are fully coated. Marinate for at least 15 minutes.
  3. While the tuna is marinating, cook the rice noodles according to the package instructions. Once cooked, drain and set aside.
  4. In a large skillet, heat the sesame oil over medium heat. Add the sliced bell pepper and julienned carrot. Sauté for about 3-4 minutes until slightly tender.
  5. Stir in the cooked rice noodles, peanut butter, and chopped green onions. Toss everything together until well combined. Cook for an additional 2-3 minutes to heat through, then season with salt and pepper to taste.
  6. In a separate pan or grill, sear the marinated tuna steaks over medium-high heat for 2-3 minutes on each side for medium-rare, or longer if you prefer them more cooked.
  7. Remove the tuna from the heat and let it rest for a minute before slicing it into thick strips.
  8. Plate the spicy noodles first, then place the sliced tuna steaks on top. Garnish with fresh cilantro and serve with lime wedges on the side. Enjoy your vibrant Thai-inspired meal!
