Ingredients

  • 1 lb ground beef (or ground turkey)
  • 0.5 cup breadcrumbs
  • 0.25 cup green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, freshly grated
  • 1 tbsp sesame oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup soy sauce (low sodium preferred)
  • 0.25 cup honey
  • 2 tbsp gochujang (Korean chili paste)
  • 1 tbsp rice vinegar
  • 1 tbsp corn starch
  • 1 Prise sesame seeds for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the ground beef, breadcrumbs, green onions, minced garlic, grated ginger, sesame oil, salt, and black pepper. Mix until all ingredients are fully incorporated.
  3. Shape the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet. You should yield about 20 meatballs.
  4. In a separate bowl, whisk together soy sauce, honey, gochujang, rice vinegar, and corn starch until smooth. This will be your sweet and spicy glaze.
  5. Brush half of the glaze over the meatballs, reserving the other half for later.
  6. Bake the meatballs in the preheated oven for 15-20 minutes, or until they are cooked through and the internal temperature reaches 160°F (70°C).
  7. Once cooked, take them out of the oven and toss the meatballs in the reserved glaze for an extra layer of flavor.
  8. Plate the meatballs and sprinkle sesame seeds and additional chopped green onions on top for garnish.

Serve these meatballs on a large platter, drizzled with more glaze and garnished with sesame seeds and thinly sliced cucumbers for a refreshing contrast. Enjoy with toothpicks for a fun appetizer!
