Strawberry Shortcake Cheesecake Rolls Easy Dessert Idea
Ingredients
- 8 oz cream cheese, softened
- 0.5 cup powdered sugar
- 1 tsp vanilla extract
- 0.5 cup heavy whipping cream
- 1 cup fresh strawberries, sliced
- 4 large flour tortillas
- 1 cup crushed shortbread cookies
- 1 Prise Additional strawberries for garnish (optional)
- 1 Prise Whipped cream for serving (optional)
Instructions
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until creamy and smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until well combined.
- In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Lay one tortilla flat on a clean surface. Spread a generous layer of the cheesecake mixture over the entire surface of the tortilla.
- Sprinkle a layer of sliced strawberries evenly over the cheesecake mixture.
- Add a thin layer of crushed shortbread cookies on top of the strawberries for a little crunch.
- Starting from one edge, carefully roll the tortilla tightly into a log. Repeat with the remaining tortillas.
- Once all rolls are assembled, freeze them for about 30 minutes to firm up.
- After freezing, remove the rolls and slice each one into individual pieces, about 1-2 inches thick.
- Serve the rolls drizzled with extra whipped cream and garnished with fresh strawberries if desired.
