Ingredients

  • 8 oz cream cheese, softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 0.5 cup heavy whipping cream
  • 1 cup fresh strawberries, sliced
  • 4 large flour tortillas
  • 1 cup crushed shortbread cookies
  • 1 Prise Additional strawberries for garnish (optional)
  • 1 Prise Whipped cream for serving (optional)

Instructions

  1. In a large mixing bowl, beat the softened cream cheese with an electric mixer until creamy and smooth.
  2. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  3. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  4. Lay one tortilla flat on a clean surface. Spread a generous layer of the cheesecake mixture over the entire surface of the tortilla.
  5. Sprinkle a layer of sliced strawberries evenly over the cheesecake mixture.
  6. Add a thin layer of crushed shortbread cookies on top of the strawberries for a little crunch.
  7. Starting from one edge, carefully roll the tortilla tightly into a log. Repeat with the remaining tortillas.
  8. Once all rolls are assembled, freeze them for about 30 minutes to firm up.
  9. After freezing, remove the rolls and slice each one into individual pieces, about 1-2 inches thick.
  10. Serve the rolls drizzled with extra whipped cream and garnished with fresh strawberries if desired.
