Ingredients

  • 8 oz pasta (penne or fusilli)
  • 1 lb boneless, skinless chicken breasts, cubed
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil
  • 1 pinch fresh basil (optional)

Instructions

  1. In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the cubed chicken and season with salt, pepper, onion powder, and garlic powder. Sauté until the chicken is cooked through and golden brown, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Then add the chopped spinach and cook until wilted. Lower the heat and stir in the cream cheese, combining until smooth.
  4. Stir in the sour cream and grated Parmesan cheese, mixing until well incorporated. If the sauce is too thick, add a splash of pasta water to reach your desired consistency.
  5. Return the cooked chicken to the skillet, then add the pasta. Toss everything together in the skillet until the pasta is well coated with the spinach dip sauce. Lastly, sprinkle shredded mozzarella cheese on top and cover until melted.
  6. Once the cheese is melted, divide the Spinach Dip Chicken Pasta into serving bowls. Garnish with fresh basil if desired and enjoy your delicious creation!
