Ingredients

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 1 lb baby potatoes, halved
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 Prise salt
  • 1 Prise pepper
  • 1 Prise fresh parsley, chopped (for garnish)
  • 1 Prise olive oil, for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C). In a large bowl, toss the halved baby potatoes with olive oil, salt, pepper, and paprika. Spread them out in a single layer on a baking sheet.
  2. Roast the potatoes in the preheated oven for about 25-30 minutes, or until they are golden brown and crispy, flipping halfway through for even cooking.
  3. While the potatoes are roasting, heat a large skillet over medium-high heat. Add 2 tablespoons of butter. When melted, add the cubed steak, seasoning with salt, pepper, and dried thyme. Cook for 2-3 minutes per side, or until browned and cooked to your desired doneness.
  4. Reduce heat to medium, add the remaining 2 tablespoons of butter and minced garlic to the skillet. Sauté together for 1-2 minutes, letting the garlic become fragrant without burning.
  5. Once both the steak bites and potatoes are done, combine them in the skillet. Gently toss to coat with the garlic butter, bringing everything together.
  6. Remove from heat, garnish with chopped fresh parsley, and serve hot!
