Sizzling Citrus Scallops with Herb Infusion
Ingredients
- 1 pound large sea scallops, cleaned and patted dry
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 unit Zest of orange
- 1 unit Zest of lime
- 0.5 unit Juice of orange
- 0.5 unit Juice of lime
- 3 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh cilantro, chopped
- 1 teaspoon red pepper flakes (optional)
- 1 Prise Salt to taste
- 1 Prise Pepper to taste
- 1 unit Microgreens or extra herbs for garnish
Instructions
- Ensure the scallops are completely dry. Season both sides with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat. Once hot, add the butter and let it melt.
- Carefully place the scallops in the pan, ensuring they’re not crowded. Sear them for about 2-3 minutes on one side until a golden crust forms. Use tweezers or tongs to turn them over.
- After flipping the scallops, add minced garlic, orange zest, lime zest, orange juice, and lime juice to the pan. Cook for another 2-3 minutes, basting the scallops with the pan juices.
- Stir in the chopped parsley and cilantro and sprinkle in the red pepper flakes if using. Cook for an additional minute until the herbs are fragrant and the scallops are opaque in the center.
- Transfer the scallops onto a serving plate, drizzling the pan sauce over them. Garnish with microgreens or extra herbs.
