Ingredients

  • 1.5 cups all-purpose flour
  • 1 cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp cocoa powder
  • 0.5 tsp salt
  • 1 cups vegetable oil
  • 1 cups buttermilk, room temperature
  • 2 large eggs
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 0.5 tsp white vinegar
  • 8 oz cream cheese, softened
  • 0.5 cups powdered sugar
  • 8 oz white chocolate, chopped
  • 1 Prise sprinkles or edible glitter (for decoration)
  • 1 Prise lollipop sticks

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large mixing bowl, sift together the flour, sugar, baking soda, cocoa powder, and salt.
  3. In another bowl, whisk together the oil, buttermilk, eggs, red food coloring, vanilla extract, and white vinegar until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined and smooth.
  5. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool completely in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  7. Once cooled, crumble the cake into a large mixing bowl. Add the softened cream cheese and powdered sugar. Mix until fully combined and the mixture holds together.
  8. Using your hands, form the cake mixture into small balls, about 1 inch in diameter.
  9. Insert a lollipop stick into each cake ball, and place them on a baking sheet lined with parchment paper. Freeze for about 30 minutes to firm up.
  10. While the cake pops are chilling, melt the white chocolate or candy melts in a microwave-safe bowl, stirring every 30 seconds until smooth.
  11. Remove the cake pops from the freezer. Dip each pop into the melted chocolate, spinning to coat evenly. Allow excess chocolate to drip back into the bowl.
  12. Before the chocolate sets, decorate the pops with sprinkles or edible glitter.
  13. Place the decorated cake pops upright in a styrofoam block or a cake pop stand to set completely.
