Ingredients

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 12 pieces mini chocolate peanut butter cups, halved
  • 1 Prise sea salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the creamy peanut butter and granulated sugar until smooth and creamy.
  3. Add the egg, vanilla extract, baking soda, and salt to the bowl; mix well until all ingredients are fully incorporated.
  4. Using a tablespoon, scoop out dough and roll it into balls. Place the cookie dough balls on the prepared baking sheet, leaving space between them to allow for spreading.
  5. Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden.
  6. Once out of the oven, immediately press one half of a chocolate peanut butter cup into the center of each cookie. Return the cookies to the oven for an additional 2-3 minutes to soften the chocolate.
  7. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  8. If desired, sprinkle a pinch of sea salt on top of each cookie for an extra flavor boost.
