Ingredients

  • 4 pieces boneless pork chops (about 1-inch thick)
  • 2 pieces ripe peaches, diced
  • 0.25 cup peach preserves
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 Prise salt (to taste)
  • 1 Prise pepper (to taste)
  • 2 tbsp olive oil
  • 1 sprig fresh thyme (for garnish)

Instructions

  1. In a small saucepan over medium heat, combine the diced peaches, peach preserves, soy sauce, apple cider vinegar, Dijon mustard, ginger, and garlic. Stir well and bring to a simmer, cooking for about 5-7 minutes until the peaches soften and the mixture thickens slightly. Remove from heat and set aside.
  2. Pat the pork chops dry with paper towels and season both sides with salt and pepper.
  3. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the pork chops and sear for 4-5 minutes on each side, or until they develop a golden-brown crust and reach an internal temperature of 145°F (63°C).
  4. Once the pork chops are cooked, pour the peach glaze over them in the skillet. Spoon the glaze on top of the chops and let them simmer for an additional 2-3 minutes, allowing the flavors to meld together and the glaze to become sticky.
  5. Remove the pork chops from the skillet and place them on a serving platter. Drizzle any remaining glaze from the skillet over the top.
  6. Garnish with fresh thyme sprigs for a pop of color and added flavor.
