Peach Glazed Pork Chops
Ingredients
- 4 pieces boneless pork chops (about 1-inch thick)
- 2 pieces ripe peaches, diced
- 0.25 cup peach preserves
- 2 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tsp fresh ginger, grated
- 2 cloves garlic, minced
- 1 Prise salt (to taste)
- 1 Prise pepper (to taste)
- 2 tbsp olive oil
- 1 sprig fresh thyme (for garnish)
Instructions
- In a small saucepan over medium heat, combine the diced peaches, peach preserves, soy sauce, apple cider vinegar, Dijon mustard, ginger, and garlic. Stir well and bring to a simmer, cooking for about 5-7 minutes until the peaches soften and the mixture thickens slightly. Remove from heat and set aside.
- Pat the pork chops dry with paper towels and season both sides with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Once hot, add the pork chops and sear for 4-5 minutes on each side, or until they develop a golden-brown crust and reach an internal temperature of 145°F (63°C).
- Once the pork chops are cooked, pour the peach glaze over them in the skillet. Spoon the glaze on top of the chops and let them simmer for an additional 2-3 minutes, allowing the flavors to meld together and the glaze to become sticky.
- Remove the pork chops from the skillet and place them on a serving platter. Drizzle any remaining glaze from the skillet over the top.
- Garnish with fresh thyme sprigs for a pop of color and added flavor.
