Ingredients
- 4 fillets cod (about 6 oz. each)
- 1 cup panko breadcrumbs
- 0.5 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1 each lemon zest
- 1 teaspoon garlic powder
- 0.5 teaspoon paprika
- 1 Prise salt
- 1 Prise pepper
- 2 tablespoons melted butter or olive oil
- 1 each lemon wedges for serving
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, combine the panko breadcrumbs, grated Parmesan cheese, chopped parsley, lemon zest, garlic powder, paprika, salt, and pepper. Mix well until evenly combined.
- Pat the cod fillets dry with paper towels to remove excess moisture. Place the fillets on the prepared baking sheet.
- Brush each cod fillet with melted butter or olive oil to help the crust adhere.
- Generously press the panko mixture onto the top of each cod fillet, ensuring it is evenly coated.
- Bake in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork, and the crust is golden brown.
- Remove from the oven and let rest for a minute before serving. Serve hot, with lemon wedges on the side for a fresh squeeze.
