Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon red pepper flakes (optional)
  • 6 cups chicken broth
  • 14.5 ounces can diced tomatoes, undrained
  • 9 ounces package cheese tortellini
  • 2 cups fresh spinach
  • 1 Prise salt to taste
  • 1 Prise pepper to taste
  • 1 serving grated Parmesan cheese for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spatula as it cooks (about 5-7 minutes).
  2. Once the sausage is browned, add the diced onion, garlic, carrots, and celery to the pot. Sauté for about 5 minutes until the vegetables are softened.
  3. Stir in the dried oregano, dried basil, and red pepper flakes (if using) to bloom the spices for about 1 minute.
  4. Pour in the chicken broth and add the can of diced tomatoes with their juices. Bring the mixture to a gentle boil.
  5. Once boiling, reduce the heat to a simmer and add the tortellini. Cook according to the package instructions, usually about 3-5 minutes for fresh tortellini or 7-9 minutes for frozen.
  6. When the tortellini is tender, stir in the fresh spinach and let it wilt for about 1-2 minutes.
  7. Season the soup with salt and pepper to taste.
  8. Serve hot, garnished with a sprinkle of grated Parmesan cheese on top.
