One Pot Italian Sausage Tortellini Soup Recipe
Ingredients
- 1 tablespoon olive oil
- 1 pound Italian sausage
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 0.5 teaspoon red pepper flakes (optional)
- 6 cups chicken broth
- 14.5 ounces can diced tomatoes, undrained
- 9 ounces package cheese tortellini
- 2 cups fresh spinach
- 1 Prise salt to taste
- 1 Prise pepper to taste
- 1 serving grated Parmesan cheese for serving
Instructions
- In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spatula as it cooks (about 5-7 minutes).
- Once the sausage is browned, add the diced onion, garlic, carrots, and celery to the pot. Sauté for about 5 minutes until the vegetables are softened.
- Stir in the dried oregano, dried basil, and red pepper flakes (if using) to bloom the spices for about 1 minute.
- Pour in the chicken broth and add the can of diced tomatoes with their juices. Bring the mixture to a gentle boil.
- Once boiling, reduce the heat to a simmer and add the tortellini. Cook according to the package instructions, usually about 3-5 minutes for fresh tortellini or 7-9 minutes for frozen.
- When the tortellini is tender, stir in the fresh spinach and let it wilt for about 1-2 minutes.
- Season the soup with salt and pepper to taste.
- Serve hot, garnished with a sprinkle of grated Parmesan cheese on top.
