Ingredients

  • 1 cup all-purpose flour
  • 0.25 cup powdered sugar
  • 0.25 tsp salt
  • 0.5 cup unsalted butter, softened
  • 1 large egg
  • 1 cup pecans, chopped
  • 0.75 cup brown sugar
  • 0.75 cup corn syrup
  • 1 tsp vanilla extract
  • 0.5 tsp ground cinnamon
  • 0.25 tsp nutmeg
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the flour, powdered sugar, and salt. Add the softened butter and mix until crumbly. Stir in the egg until a dough forms.
  3. Divide the dough into 12 equal pieces and press each piece into the bottom and sides of a greased mini muffin tin. Ensure the crust is evenly shaped.
  4. In a medium bowl, combine the chopped pecans, brown sugar, corn syrup, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Mix well to combine.
  5. Spoon the pecan filling into each mini pie crust, filling them about 3/4 full.
  6. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the filling is set and the edges of the crust are golden brown.
  7. Remove the mini pies from the oven and let them cool in the tin for about 10 minutes before transferring them to a wire rack to cool completely.
