Mini Pecan Pies Tempting Treat for Any Occasion
Ingredients
- 1 cup all-purpose flour
- 0.25 cup powdered sugar
- 0.25 tsp salt
- 0.5 cup unsalted butter, softened
- 1 large egg
- 1 cup pecans, chopped
- 0.75 cup brown sugar
- 0.75 cup corn syrup
- 1 tsp vanilla extract
- 0.5 tsp ground cinnamon
- 0.25 tsp nutmeg
- 1 pinch salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the flour, powdered sugar, and salt. Add the softened butter and mix until crumbly. Stir in the egg until a dough forms.
- Divide the dough into 12 equal pieces and press each piece into the bottom and sides of a greased mini muffin tin. Ensure the crust is evenly shaped.
- In a medium bowl, combine the chopped pecans, brown sugar, corn syrup, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Mix well to combine.
- Spoon the pecan filling into each mini pie crust, filling them about 3/4 full.
- Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the filling is set and the edges of the crust are golden brown.
- Remove the mini pies from the oven and let them cool in the tin for about 10 minutes before transferring them to a wire rack to cool completely.
