Ingredients

  • 4 large russet potatoes
  • 1 lb sirloin steak, cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 Prise salt to taste
  • 1 Prise pepper to taste
  • 1 cup shredded sharp cheddar cheese
  • 1 cup sour cream
  • 4 pieces green onions, sliced
  • 0.5 cup crispy bacon bits
  • 0.25 cup fresh chives, chopped

Instructions

  1. Preheat the oven to 425°F (220°C). Scrub the russet potatoes clean and poke several holes in each potato with a fork to allow steam to escape.
  2. Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until the skin is crispy and a fork easily pierces through the center.
  3. While the potatoes bake, heat the olive oil in a skillet over medium-high heat. Season the sirloin steak cubes with smoked paprika, garlic powder, salt, and pepper.
  4. Add the steak cubes to the skillet and sear for about 2-3 minutes on each side, or until they reach your desired level of doneness. Remove from heat and let them rest.
  5. Once the potatoes are baked, carefully remove them from the oven. Slice each potato down the center, open them up, and fluff the insides with a fork for added texture.
  6. Start by spooning the sour cream into each potato, followed by a generous amount of cheddar cheese, juicy steak bites, crispy bacon bits, and sliced green onions.
  7. Sprinkle freshly chopped chives on top for a burst of color and flavor.
