Ingredients

  • 4 pieces chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 0.25 cups honey
  • 0.25 cups freshly squeezed lemon juice
  • 1 piece Zest of lemon
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • 0.5 teaspoon dried thyme
  • 1 Prise salt (optional)
  • 1 Prise pepper (optional)
  • 1 pieces lemon slices for garnish
  • 1 sprigs fresh thyme for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together the honey, lemon juice, lemon zest, minced garlic, thyme, and a pinch of salt and pepper until well combined.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Season the chicken thighs generously with salt and pepper.
  4. Once the oil is shimmering, place the chicken skin-side down in the skillet and sear for about 5-7 minutes, or until the skin is golden brown and crispy.
  5. Flip the chicken thighs over and pour the lemon-honey mixture over the top.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F / 75°C).
  7. During the last 5-10 minutes of cooking, turn the broiler on for a quick glaze, watching carefully to ensure the glaze doesn't burn.
  8. Remove the skillet from the oven, and let the chicken rest for a few minutes.
  9. Serve the chicken hot, spooning some of the remaining glaze over it, and garnish with lemon slices and fresh thyme sprigs.
