Ingredients

  • 250 g mascarpone cheese
  • 100 g powdered sugar
  • 2 pieces lemons (zested and juiced)
  • 200 ml heavy cream
  • 200 g ladyfinger biscuits
  • 150 ml strong brewed lemon tea (cooled)
  • 1 Prise fresh mint leaves for garnish

Instructions

  1. In a large mixing bowl, combine the mascarpone cheese, powdered sugar, lemon zest, and lemon juice. Mix until smooth and creamy.
  2. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined, being careful not to deflate the cream.
  3. Prepare the lemon tea by brewing strong tea and letting it cool.
  4. Briefly dip each ladyfinger biscuit into the cooled lemon tea, ensuring they are soaked but not soggy.
  5. Layer half of the soaked ladyfingers in the bottom of a serving dish or individual cups.
  6. Spread half of the mascarpone mixture over the first layer of ladyfingers.
  7. Repeat with another layer of soaked ladyfingers, followed by the remaining mascarpone mixture on top.
  8. Cover and refrigerate for at least 4 hours or overnight for best results to allow the flavors to meld.
  9. Before serving, garnish with fresh mint leaves for a pop of color and freshness.
