Ingredients

  • 4 cups fresh corn kernels
  • 0.5 cups unsalted butter
  • 0.25 cups honey
  • 1 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp smoked paprika
  • 2 tbsp fresh parsley, chopped
  • 1 Prise zest of 1 lime (optional)

Instructions

  1. Begin by removing the corn kernels from the cobs. To do this, stand each ear of corn upright on a cutting board and slice downward to release the kernels. Set aside.
  2. In a large skillet, melt the butter over medium heat until bubbly and foamy, about 1-2 minutes.
  3. Add the corn kernels into the skillet, stirring well to coat them in the melted butter.
  4. Reduce the heat to medium-low and let the corn cook for about 5-7 minutes, stirring occasionally, until the kernels are tender and have begun to caramelize slightly.
  5. Pour the honey over the cooked corn, then sprinkle in the salt, black pepper, and smoked paprika. Stir well to combine and let it cook for an additional 2-3 minutes, allowing the honey to infuse the corn.
  6. If desired, add lime zest to the mixture for a zesty brightness and stir to incorporate.
  7. Once done, remove the skillet from heat and transfer the corn to a serving dish.
  8. Garnish with fresh parsley before serving.
