Ingredients

  • 4 slices sourdough bread
  • 6 oz Gouda cheese, sliced
  • 1 cup mushrooms, sliced (shiitake or cremini preferred)
  • 1 medium onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme, chopped
  • 1 Prise salt (optional)
  • 1 Prise pepper (optional)
  • 2 tablespoons butter

Instructions

  1. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sauté until soft and caramelized, about 5-7 minutes. Toss in the sliced mushrooms and continue to sauté for another 5 minutes until the mushrooms are browned. Season with fresh thyme, salt, and pepper. Remove from heat and set aside.
  2. Place 2 slices of sourdough bread on a clean surface. Layer a generous portion of Gouda cheese on each slice.
  3. Spoon the sautéed mushroom and onion mixture evenly over the cheese on both slices. Top with the remaining Gouda cheese slices.
  4. Place the other 2 slices of sourdough bread on top, creating two sandwiches filled with the savory mixture.
  5. In the same skillet, melt 1 tablespoon of butter over medium heat. Once melted, place one sandwich in the skillet. Cook for 3-4 minutes, or until the bread is golden brown. Carefully flip the sandwich, adding the remaining butter for the second side, and grill for another 3-4 minutes until the cheese is melted and the bread is golden.
  6. Remove from the skillet and let it sit for a minute. Slice the sandwiches diagonally and serve warm.

Serve the grilled cheese on a wooden board with a side of crispy potato chips or a simple green salad for a touch of freshness.
