Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 small red bell pepper, sliced
  • 1 cup pineapple chunks (fresh or canned)
  • 2 tablespoons soy sauce (or coconut aminos)
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 0.25 teaspoon red pepper flakes (optional)
  • 1 Prise salt to taste
  • 1 Prise pepper to taste
  • 2 green onions chopped (for garnish)
  • 1 serving cooked jasmine rice (for serving)

Instructions

  1. Rinse the shrimp under cold water and pat them dry with paper towels. Season with salt and pepper.
  2. In a large skillet, melt the butter over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Add in the sliced red bell pepper and cook for another 2-3 minutes until it starts to soften.
  4. Increase the heat to medium-high and add the seasoned shrimp to the skillet. Cook for about 2-3 minutes on each side until they turn pink and opaque.
  5. Stir in the pineapple chunks, soy sauce, honey, lime juice, and red pepper flakes (if using). Cook for an additional 3-4 minutes, allowing the flavors to meld together.
  6. Remove from heat and taste; adjust seasoning with more salt, pepper, or lime juice as desired.
  7. Serve the garlic shrimp over a bed of jasmine rice, garnished with chopped green onions.

💡 Chef's Notes

Serve with lime wedges and additional green onions for garnish.
