Ingredients

  • 1 pound sirloin steak, cut into bite-sized cubes
  • 4 medium Yukon gold potatoes, diced into small cubes
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 Prise fresh parsley, chopped (for garnish)
  • 1 Prise olive oil (for drizzling)

Instructions

  1. Preheat your oven to 425°F (220°C). Toss the diced potatoes in a bowl with olive oil, salt, smoked paprika, and pepper. Spread them in a single layer on a baking sheet.
  2. Bake the potatoes in the preheated oven for about 25-30 minutes, turning once halfway through, until they are crispy and golden brown.
  3. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Season the steak cubes with salt, black pepper, and dried thyme. Once the butter is bubbling, add the steak bites.
  4. Cook the steak bites for about 2-3 minutes on each side for medium-rare, or until they reach your desired doneness. Remove the steak bites from the skillet and set aside.
  5. In the same hot skillet, add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 1-2 minutes until fragrant and the garlic starts to turn golden.
  6. Return the cooked steak bites to the skillet and toss them in the garlic butter, ensuring the bites are well coated.
  7. Once the potatoes are crispy and golden, remove them from the oven. Plate the garlic butter steak bites alongside the crispy potatoes.

💡 Chef's Notes

Sprinkle chopped fresh parsley over the steak bites for a pop of color.
