Ingredients

  • 1 cup water
  • 1 cup granulated sugar
  • 1 cup fresh or frozen dragon fruit (sliced)
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 pinch salt

Instructions

  1. In a small saucepan, combine the water and granulated sugar over medium heat. Stir occasionally until the sugar completely dissolves, creating a simple syrup.
  2. Add the slices of dragon fruit to the saucepan and bring the mixture to a gentle simmer. Cook for about 10 minutes, allowing the dragon fruit to infuse its flavor into the syrup.
  3. Remove the saucepan from heat and let it cool for a few minutes.
  4. Once cooled, add the lemon juice, vanilla extract, and a pinch of salt to enhance the flavor profile.
  5. Using a fine mesh strainer or cheesecloth, strain the syrup into a clean bottle or jar, discarding the dragon fruit solids.
  6. Allow the syrup to cool completely before sealing the bottle.
