Easy Tuscan Chicken Pasta Quick and Flavorful Recipe
Ingredients
- 2 pieces boneless, skinless chicken breasts, sliced
- 12 oz penne pasta
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 0.5 cup heavy cream
- 0.5 cup chicken broth
- 0.25 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 tsp dried Italian herbs
- 0.5 tsp red pepper flakes
- 1 Prise olive oil
- 1 Prise salt to taste
- 1 Prise pepper to taste
- 1 Prise fresh basil leaves for garnish (optional)
- 1 Prise grated parmesan cheese (optional)
Instructions
- Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
- Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the sliced chicken with salt, pepper, and Italian herbs. Add to the skillet and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
- Prepare the Sauce: In the same skillet, add a little more olive oil if needed and sauté the minced garlic until fragrant, about 30 seconds. Then, add the cherry tomatoes and sun-dried tomatoes, cooking until the tomatoes start to soften, about 3-4 minutes.
- Create Cream Sauce: Pour in the chicken broth and heavy cream, stirring to combine. Allow the mixture to simmer for about 5 minutes to thicken slightly.
- Combine Ingredients: Add the cooked chicken back into the skillet, followed by the fresh spinach. Stir until the spinach wilts, then mix in the cooked pasta. If the sauce is too thick, you can add a little more chicken broth or a splash of water to reach your desired consistency.
- Season and Serve: Taste and adjust seasoning with salt, pepper, and red pepper flakes as desired. Remove from heat and top with grated parmesan cheese and fresh basil, if using.
