Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 cups spinach, fresh
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 Prise salt (to taste)
  • 1 Prise pepper (to taste)
  • 1 Prise fresh basil for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the shrimp to the skillet and season with salt, pepper, and Italian seasoning. Cook for 2-3 minutes until the shrimp start to turn pink.
  4. Stir in the cherry tomatoes and cook for an additional 2 minutes until they soften.
  5. Lower the heat and pour in the heavy cream, stirring to combine well.
  6. Gradually add the grated Parmesan cheese, stirring until the sauce becomes creamy and smooth.
  7. Stir in the fresh spinach and cook for about 1-2 minutes until wilted.
  8. Taste and adjust the seasoning with more salt and pepper if needed.
  9. Remove from heat and garnish with fresh basil before serving.
