Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 cups frozen mixed vegetables (peas, carrots, corn)
  • 10.5 oz cream of chicken soup
  • 1 cups chicken broth
  • 1 cups milk
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 12 oz refrigerated biscuit dough (or crescent roll dough)
  • 1 cups shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked chicken, frozen mixed vegetables, cream of chicken soup, chicken broth, milk, onion powder, garlic powder, thyme, salt, and black pepper. Stir until everything is well blended.
  3. Pour the chicken mixture into a greased 9x13-inch casserole dish, spreading it evenly.
  4. Open the package of biscuit dough and cut each biscuit into quarters. If using crescent roll dough, tear it into small pieces.
  5. Scatter the biscuit or crescent roll pieces evenly over the top of the chicken mixture.
  6. If desired, sprinkle the shredded cheddar cheese over the biscuits for an extra cheesy flavor.
  7. Bake in the preheated oven for 25-30 minutes, or until the biscuit topping is golden brown and the casserole is bubbly.
  8. Allow to cool for a few minutes before serving.

💡 Chef's Notes

Serve the casserole directly from the dish, garnished with fresh parsley for a pop of color.
