Ingredients

  • 6 pieces pork sausages
  • 4 large russet potatoes, peeled and chopped
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh chives, chopped
  • 1 cup whole milk
  • 1 Prise salt to taste
  • 1 Prise pepper to taste
  • 1 tablespoon Dijon mustard (optional)

Instructions

  1. In a large skillet over medium-high heat, add the sausages. Cook for about 15-20 minutes, turning occasionally, until they are golden brown and cooked through. Remove from skillet and keep warm.
  2. While the sausages are cooking, in a large pot, add the chopped potatoes and cover them with cold salted water. Bring to a boil over high heat, then reduce to medium and cook for about 15 minutes or until easily pierced with a fork.
  3. In the same skillet used for the sausages, melt 2 tablespoons of butter over medium heat. Add the minced garlic and thyme, cooking until fragrant (about 1-2 minutes). Remove from heat and mix in chopped chives.
  4. Drain the potatoes and return them to the pot. Add the remaining 2 tablespoons of butter, milk, salt, and pepper to taste. Mash the potatoes until creamy and smooth. If using, stir in the Dijon mustard for a tangy twist.
  5. On a plate, serve a generous scoop of mashed potatoes topped with the sausages. Drizzle the garlic herb butter over the top of the sausages and mash.

💡 Chef's Notes

For a pop of color, garnish with additional fresh chives or a sprinkle of freshly ground black pepper.
