Deep Dish Pizza Cupcakes Recipe: A Creative Culinary Twist
Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tsp salt
- 1 tsp garlic powder
- 1 cups buttermilk
- 0.5 cups olive oil
- 2 large eggs
- 1 tsp Italian seasoning
- 1 cups marinara sauce
- 1.5 cups shredded mozzarella cheese
- 1 cups diced pepperoni
- 0.5 cups diced bell peppers
- 0.25 cups grated Parmesan cheese
- 1 Prise fresh basil leaves (for garnish)
- 1 Prise extra marinara sauce (for dipping)
Instructions
- Preheat your oven to 375°F (190°C) and grease a standard muffin tin generously with cooking spray or oil.
- In a large bowl, whisk together the flour, baking powder, salt, garlic powder, and Italian seasoning.
- In another bowl, mix the buttermilk, olive oil, and eggs until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
- Spoon a small amount of the batter (about a tablespoon) into the bottom of each muffin cup to form a base.
- Add a spoonful of marinara sauce into each cup, then sprinkle a layer of mozzarella cheese, followed by diced pepperoni and bell peppers if using. Repeat this layering until you reach the top of the muffin cups, finishing with a final layer of batter to seal it in.
- Bake in the preheated oven for 20-25 minutes or until the tops are golden brown and a toothpick inserted into the center comes out mostly clean.
- Remove from the oven and allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool slightly.
- Once cooled, garnish with fresh basil leaves and serve warm with extra marinara sauce on the side for dipping.
