Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 cups buttermilk
  • 0.5 cups olive oil
  • 2 large eggs
  • 1 tsp Italian seasoning
  • 1 cups marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • 1 cups diced pepperoni
  • 0.5 cups diced bell peppers
  • 0.25 cups grated Parmesan cheese
  • 1 Prise fresh basil leaves (for garnish)
  • 1 Prise extra marinara sauce (for dipping)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a standard muffin tin generously with cooking spray or oil.
  2. In a large bowl, whisk together the flour, baking powder, salt, garlic powder, and Italian seasoning.
  3. In another bowl, mix the buttermilk, olive oil, and eggs until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  5. Spoon a small amount of the batter (about a tablespoon) into the bottom of each muffin cup to form a base.
  6. Add a spoonful of marinara sauce into each cup, then sprinkle a layer of mozzarella cheese, followed by diced pepperoni and bell peppers if using. Repeat this layering until you reach the top of the muffin cups, finishing with a final layer of batter to seal it in.
  7. Bake in the preheated oven for 20-25 minutes or until the tops are golden brown and a toothpick inserted into the center comes out mostly clean.
  8. Remove from the oven and allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool slightly.
  9. Once cooled, garnish with fresh basil leaves and serve warm with extra marinara sauce on the side for dipping.
