Ingredients

  • 1 pound fresh lobster meat, cooked and chopped
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 0.5 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon paprika
  • 0.25 teaspoon cayenne pepper (optional for heat)
  • 0.33 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 Prise salt to taste
  • 1 Prise pepper to taste
  • 0.25 cup unsalted butter
  • 1 serving lemon wedges for serving

Instructions

  1. In a mixing bowl, combine the breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, paprika, cayenne pepper, salt, and pepper. Mix until well combined.
  2. Set up a dredging station by placing flour in one shallow bowl, beaten eggs in a second bowl, and the breadcrumb mixture in a third bowl.
  3. Take a piece of lobster meat, lightly coat it in flour, then dip it in the beaten eggs, allowing any excess to drip off, and finally coat it with the breadcrumb mixture. Press gently to ensure the crumbs stick.
  4. Repeat until all lobster pieces are coated.
  5. In a large skillet, melt the butter over medium heat. Once melted and bubbling, carefully add the coated lobster bites in batches, ensuring not to overcrowd the pan.
  6. Fry the lobster bites for about 3-4 minutes on each side, or until golden brown and crispy.
  7. Once cooked, remove them from the skillet and let them drain on paper towels to absorb excess oil.
  8. Serve the crispy lobster bites warm, drizzled with any remaining garlic butter from the pan and with lemon wedges on the side for squeezing.
