Ingredients

  • 1 lb ground turkey
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 cup uncooked brown rice
  • 1 cup frozen peas
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 Prise salt (to taste)
  • 1 Prise pepper (to taste)
  • 2 tbsp olive oil
  • 1 Prise fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the ground turkey to the pot, breaking it apart with a spoon. Cook until browned, about 5-6 minutes.
  4. Pour in the chicken broth and bring the mixture to a gentle boil.
  5. Add the uncooked brown rice, dried thyme, and dried oregano. Stir well to combine.
  6. Reduce the heat to low and cover the pot. Let the soup simmer for 30-35 minutes, or until the rice is tender.
  7. Stir in the frozen peas and allow to heat through for an additional 5 minutes.
  8. Season the soup with salt and pepper to taste.
  9. Serve hot, garnished with fresh chopped parsley.
