Ingredients
- 1 lb ground turkey
- 1 medium onion, chopped
- 2 medium carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 1 cup uncooked brown rice
- 1 cup frozen peas
- 1 tsp dried thyme
- 1 tsp dried oregano

Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the ground turkey to the pot, breaking it apart with a spoon. Cook until browned, about 5-6 minutes.
